Rich Moist Flourless Chocolate Cake Recipe

Wednesday, February 4th, 2009

When we talk about chocolate cake recipes, flour is often the main ingredient. So, for those on a gluten-free diet, it is pretty frustrating to find chocolate cake recipes with flour in it. Fortunately, all is not lost as there is a recipe for gluten-free, flourless chocolate cake. Most importantly, this flourless chocolate cake tastes just as phenomenal as any regular chocolate cake, if not better!

flourless chocolate cake

Unlike the conventional cakes, this cake is pretty dense due the lack of flour to make it fluffy so it is rather rich and moist too! It is also pretty easy to make and not very complicated.

These are the ingredients needed to make this cake:

230g / 8oz semisweet chocolate, broken into smaller pieces for easier melting

110g / 7 tablespoon butter, softened

5 eggs, separated

2/3 cup fine sugar (or brown sugar if you prefer)

1 tsp salt

This is what you should do to mix these ingredients and turn it into a gluten-free, rich flourless chocolate cake:

Preheat the oven to 170 degree Celsius. Grease and line a cake pan with wax paper. Then melt the chocolate and the butter over a boiling pan of water or alternatively, place it in a bowl and microwave it for about two minutes high to completely melt it.

In a mixing bowl, cream the sugar and egg yolks till fluffy. Then you fold in the chocolate mixture. In a separate bowl, use a hand mixer to whisk the egg whites and the salt until you get soft peaks. Then add about three tablespoons of sugar and continue to whisk until stiff peaks form.

You then fold the chocolate mixture into the egg whites mixture. Pour the batter into the cake pan and then bake for about 40 minutes. You will notice that this cake is a bit flat but that is expected since it is flourless. Remove from the pan for it to cool completely on a wire rack.

Sprinkle some icing sugar on top before serving this rich flourless gluten-free chocolate cake.
