			<content:encoded><![CDATA[<p>I find that gluten-free desserts and treats are often underwhelming, and sometimes, downright repulsive.  If we can make pizza and pasta that is gluten-free and tastes just as good as the regular thing, there is absolutely no reason we cannot create a delicious gluten-free chocolate cake.  Lately, I made it my mission to make a gluten-free chocolate cake that tasted just as good, possibly even better, than regular chocolate cake.</p>
<p><a href="http://cocoa-chocolate.com/wp-content/uploads/2012/04/choccake.jpg"><img class="alignright size-medium wp-image-210" title="choccake" src="http://cocoa-chocolate.com/wp-content/uploads/2012/04/choccake-300x300.jpg" alt="" width="300" height="300" /></a></p>
<p>It took me a few days of mixing and matching ingredients, but eventually I came upon a recipe that is perfect as a treat for 2 people (or one big eater).  There are a decent number of ingredients, but nothing crazy.  Most beginners will have no problem whatsoever cooking this.  This is not only a gluten-free recipe, but also dairy-free as well!</p>
<p>The Recipe</p>
<p>Here is what you are going to need:</p>
<ul>
<li>4 tablespoons All-Purpose Gluten-Free Flour</li>
<li>4 tablespoons sugar</li>
<li>2 tablespoons cocoa powder</li>
<li>1/8 teaspoon xanthan gum</li>
<li>1/8 teaspoon baking powder</li>
<li>1/8 teaspoon baking soda</li>
<li>Pinch of salt</li>
</ul>
<ul>
<li>1 large egg</li>
<li>3 tablespoons coconut oil</li>
<li>1.5 tablespoons applesauce</li>
<li>2 tablespoons almond milk</li>
<li>1/4 tablespoon gluten-free vanilla</li>
<li>2 tablespoons gluten and dairy-free chocolate chips</li>
</ul>

1.  Lightly grease a microwave-safe 16 oz. mug with coconut oil.  Set aside.</p>
<p>2.  In a medium or large bowl, whisk together the gluten-free flour, cocoa powder, sugar, xanthan gum, baking soda, baking powder, and salt.</p>
<p>3.  In a separate bowl, whisk together the egg, coconut oil, applesauce, almond milk, and vanilla.</p>
<p>4.  Combine the two bowls into one, and stir together thoroughly.</p>
<p>5.  Pour the batter into your 16 oz. mug.</p>
<p>6.  Place the mug on a microwave-safe plate.  Bake in the microwave for 2 minutes.  Check to see if it is done by placing a toothpick in the center.  If the toothpick has batter on it, cook for another 30 seconds and see if it is done at that time.</p>
<p>7.  Remove the cake from the microwave and allow to cool for about 10-15 minutes.</p>
<p>This part is optional, but it is highly recommended!  Take 4 tablespoons of peanut butter, 3 tablespoons of sugar, and 2 tablespoons of almond milk and whisk together in a bowl.  Pour on top of the cake, and you have a peanut butter frosting! So delicious!</p>

So, for those on a gluten-free diet, it is pretty frustrating to find chocolate cake recipes with flour in it. Fortunately, all is not lost as there is a recipe for gluten-free, flourless chocolate cake. Most importantly, this flourless chocolate cake tastes just as phenomenal as any regular chocolate cake, if not better!</p>

<p>Unlike the conventional cakes, this cake is pretty dense due the lack of flour to make it fluffy so it is rather rich and moist too! It is also pretty easy to make and not very complicated.</p>
<p><em>These are the ingredients needed to make this cake:</em><br />

<p>230g / 8oz semisweet chocolate, broken into smaller pieces for easier melting</p>
<p>110g / 7 tablespoon butter, softened</p>
<p>5 eggs, separated</p>
<p>2/3 cup fine sugar (or brown sugar if you prefer)</p>
<p>1 tsp salt</p>
<p><em>This is what you should do to mix these ingredients and turn it into a gluten-free, rich flourless chocolate cake:</em></p>
<p>Preheat the oven to 170 degree Celsius. Grease and line a cake pan with wax paper. Then melt the chocolate and the butter over a boiling pan of water or alternatively, place it in a bowl and microwave it for about two minutes high to completely melt it.</p>
<p>In a mixing bowl, cream the sugar and egg yolks till fluffy. Then you fold in the chocolate mixture. In a separate bowl, use a hand mixer to whisk the egg whites and the salt until you get soft peaks. Then add about three tablespoons of sugar and continue to whisk until stiff peaks form.</p>
<p>You then fold the chocolate mixture into the egg whites mixture. Pour the batter into the cake pan and then bake for about 40 minutes. You will notice that this cake is a bit flat but that is expected since it is flourless. Remove from the pan for it to cool completely on a wire rack.</p>
<p>Sprinkle some icing sugar on top before serving this rich flourless gluten-free chocolate cake.</p>
